CROCK-POT CHICKEN 
2 Cornish hens
1 medium onion, cut into chunks
2-3 tsp. minced garlic
olive oil
1 lemon, cut in quarters
Montreal chicken seasoning (McCormick)
paprika
salt and black pepper

Put the onion chunks and minced garlic in the bottom of Crock-Pot. Wash Cornish hens, and pat dry. Rub olive oil all over hens. Salt and pepper hen on inside, put lemon quarters inside hen (2 per hen).

Sprinkle chicken seasoning, paprika, salt and pepper over outside of oiled hen. Place hens on top of onion/garlic. Place lid on Crock-Pot.

Cook on high for 2 hours, then on low for 2 to 3 hours.

Note: Do not add water to Crock-Pot!!!
