CHICKEN CACCIATORE 
1/2 lb. mushrooms, sliced
1 green pepper, finely diced
2 onions, thinly sliced
2 garlic cloves, minced
2 peeled & chopped tomatoes
1/2 tsp. dried basil
1/2 tsp. dried oregano
1/4 tsp. black pepper
1/2 c. wine
8 chicken thighs
1 pkg. linguine

Saute mushrooms, peppers, onions and garlic until limp, stirring constantly. Add tomatoes, basil, oregano, peppers and wine. Stir. Add chicken pieces. Cover and cook over low heat for 45 minutes. Serve on top of cooked linguine. 4 servings.
