CHICKEN CACCIATORE | |
1 (3-4 lb.) chicken, cut up 1/2 c. flour 1/2 c. cooking oil 1 clove garlic, minced 1 c. finely chopped onion 1 green pepper, finely diced 1 (#2) can tomatoes 1 sm. can tomato sauce 1 can mushrooms, stems and pieces 2 tsp. salt 1/4 tsp. pepper 1/2 tsp. oregano Preheat electric skillet at 360 degrees. Add oil. Coat chicken pieces with flour and fry until well browned. Add remaining ingredients, cover pan; reduce temperature and simmer 1 hour or until tender. Serve over hot spaghetti and sprinkle with grated Parmesan cheese. |
