DIET CHICKEN BREAST CACCIATORE 
6 chicken breasts
Salt and pepper to taste
Paprika to taste
1 onion, chopped
1 c. tomato juice
1 tsp. oregano
1/2 tsp. crushed bay leaf
1-2 green peppers, sliced
1 can mushrooms

Remove skin from chicken breasts; season with salt, pepper, and paprika. Brown onion and chicken (use Teflon pan). Add tomato juice, sprinkle with oregano and bay leaf. Simmer, covered, for 40 minutes, or until tender, adding tomato juice if necessary. Add green peppers and mushrooms. Cook for 15 minutes longer.
