IMPOSSIBLE COCONUT PIE 
2 c. milk
3/4 c. sugar
1/2 c. Bisquick baking mix
1/4 c. butter
4 eggs
1 1/2 tsp. vanilla
1 c. flaked or shredded coconut.

Grease a 9 x 1 1/4 or a 10 x 1 1/2 inch pie plate. Place all ingredients in a blender. Cover and blend 15 seconds on high speed. Pour into pie plate. Bake 50 to 55 minutes until golden brown and knife blade inserted in center comes out clean. Bake in a 350 degree oven.
