CHICKEN CORDON BLEU 
1 tsp. butter, divided
1 skinned and boned chicken breast (4 oz.), pounded to 1/8-inch thickness
1/2 oz. each sliced boiled ham and sliced Swiss cheese
2 1/4 tsp. plain dried bread crumbs

In small skillet heat half of the butter over medium heat until bubbly and hot; add chicken and cook briefly on each side (just until no longer pink). Transfer chicken to plate and top with ham, then cheese; starting from narrow end, roll chicken to enclose filling. Secure with toothpick and transfer to shallow individual baking dish; set aside.

Preheat oven to 400 degrees. In same skillet heat remaining butter over low heat until bubbly and hot; add crumbs and stir to combine. Sprinkle crumb mixture evenly over chicken roll and bake until cheese is melted, 2 to 3 minutes; remove toothpick and serve. Great! Before baking chicken layer chicken instead of rolling or buy thin chicken.
