CHICKEN CORDON BLEU 
2 tbsp. butter
2 tbsp. flour
1/2 c. light cream
5 oz. sharp Cheddar
6 boned whole chicken breasts
2 eggs, beaten slightly
3/4 c. unseasoned bread crumbs
6 slices ham
Dash pepper

Melt butter, blend in flour, stir in cream, add 1/4 teaspoon salt and pepper. Cook and stir until thick. Stir in cheese over low heat until melted. Pour into pie plate, chill until hard, slice into sticks.

Remove skin and pound out chicken as thin as possible. Lay slice ham on chicken and put cheese stick in center. Then roll. Dust with flour. Dip in egg, then roll in bread crumbs. Chill 1 hour. Deep fry 5 minutes and drain. Bake at 350 degrees for 35 to 40 minutes.
