BUTTER HERBED BAKED FISH 
1/2 c. butter
2/3 c. crushed saltine crackers
1/4 c. Parmesan cheese
1/2 tsp. basil leaves, oregano leaves & salt
1/4 tsp. garlic powder
1 lb. sole or perch fillets, thawed & drained

Preheat oven to 350 degrees. In 9"x13" pan, melt butter in preheated oven. Meanwhile, in 9" pie pan, combine cracker crumbs, cheese and spices. Dip fish fillets in butter and then in crumb mixture. Arrange fish fillets in baking pan. Bake for 25 to 30 minutes in 350 degree oven or until fish is tender and flakes with a fork. Makes 4 servings.
