BUTTER HERB BAKED FISH 
1/2 c. butter
2/3 c. crushed saltines
1/4 c. grated Parmesan cheese
1/2 tsp. basil leaves
1/2 tsp. oregano
1/4 tsp. salt
1/4 tsp. garlic powder
1 lb. frozen or fresh cod or perch fillets (thawed & drained)

In 9 x 13 pan melt butter in preheated oven 5 to 7 minutes. Meanwhile in 9 inch pie pan combine cracker crumbs, cheese, basil, oregano, salt and garlic powder. Dip fish fillets in butter and then in crumb mixture. Arrange fish fillets in baking pan. Bake near center of oven for 25 to 30 minutes at 350 degrees or until fish is tender and flakes with a fork. Serve immediately.

Just made this fish recipe for supper....I did alter one ingredient..I used 1/2 cup of milk to soak fish in...instead of the butter.I was thinking more healthy and it turned out great!!

I'm just a middle-aged father, not a cook. Although I omitted the saltines, this was awesome! Very easy and very tasty. My wife said it was just as good as a nice restaurant. With rice and vegatable on the side, this made a very tasty romantic dinner.
