HERB BUTTER BAKED FISH 
1/2 c. butter
2/3 c. crushed saltine crackers
1/4 c. grated Parmesan cheese
1/2 tsp. basil
1/2 tsp. oregano
1/2 tsp. salt
1/4 tsp. garlic powder
1 to 1 1/2 lbs. frozen haddock or cod fillets

Combine cracker crumbs, Parmesan cheese, basil, oregano, salt and garlic powder. Dip fish fillets in melted butter and then in crumb mixture. Arrange fillets in baking pan. Bake in a 350 degree oven for 25 to 30 minutes or until fish is tender and flakes with a fork.

Super easy and super delicious! I use fresh hake, scrod or haddock. Recipe makes enough cracker crumbs to coat 2 1/2 pounds of fish easily.

I only had Italian seasoning, so I substituted 1 tsp. of it for the basil and oregano. Only had garlic salt and used 1/4 tsp. of it and omitted the salt. Used plain Panko bread crumbs since I didn't have saltines. It turned out really well, hubby loved it.
