ZUCCHINI CASSEROLE 
4 c. sliced zucchini
1 c. mayonnaise
2 eggs, beaten
1 onion, chopped fine
4 oz. Monterey Jack cheese, grated
4 oz. Mozzarella cheese, grated
Salt and pepper to taste
1 tbsp. butter
2 tbsp. bread crumbs
2 tbsp. Parmesan cheese

Cook zucchini until tender and drain (I steam mine). Mix eggs, mayonnaise, onion, grated cheeses and salt and pepper in a bowl. Add drained zucchini. Mix gently. Pour into 2-quart greased baking dish. Dot top with butter and sprinkle on bread crumbs and Parmesan cheese. Bake at 350 degrees for 30 minutes, uncovered.
