CHUCHI'S PEACH FLAMBE (ADULTS ONLY!) | |
1 can halved peaches 3 tbs butter 1/4 cup brown sugar pinch of cinnamon pinch of nutmeg 1/3 cup rum vanilla ice cream BBQ lighter Melt butter in a heavy bottomed skillet. Add sugar and caramelize. Cut halves into quarters and place in skillet with 2 Tbs of the syrup from can. Cook until mixture becomes syrupy (about 10 minutes), then add the cinnamon and nutmeg. Pour over the rum and carefully ignite the rum using a BBQ lighter. Wait until flames have extinguished and serve over vanilla ice cream. Then ENJOY!!! Note: Flambe cooking (igniting the alcohol portion of a recipe) can be dangerous and there is a risk of injury, so proceed at your own risk and be very careful - children should not use BBQ lighters! Brandy or cognac make very good substitutes for the rum. I actually add some while cooking for flavor...
