ZUCCHINI BREAD 
1 c. vegetable oil
2 c. zucchini, finely chopped
3 tsp. vanilla
3 eggs
1 tsp. baking soda
1 c. walnuts (optional)
2 c. sugar
3 c. flour
3 tsp. cinnamon
1 tsp. salt
1 tsp. baking powder

In a blender pour 1 cup vegetable oil. Add zucchini and blend. Add vanilla and eggs, again blend. In a bowl, mix the dry ingredients: sugar, flour, cinnamon, salt, baking powder and baking soda. Gradually add the zucchini mixture. Stir until well mixed. Add walnuts, if desired. Pour into 2 greased loaf pans.

Bake at 350°F for about 1 hour or until a knife inserted into the bread comes out clean. Remove from the pans at once.
