ZUCCHINI-PINEAPPLE BREAD | |
3 eggs 2 c. sugar 1 c. oil 2 tsp. vanilla 3 c. flour 1/2 tsp. baking powder 2 tsp. baking soda 1 tsp. cinnamon 3/4 tsp. nutmeg 1/2 tsp. salt 1 c. crushed pineapple 2 c. shredded zucchini 1 c. raisins or currants 1 c. nuts Beat eggs, sugar, oil, and vanilla until creamy and frothy. Sift flour, baking powder, soda, cinnamon, nutmeg, and salt; add to above mixture. Blend pineapple, zucchini, raisins or currants, and nuts. Add. Makes 3 (1 pound) loaves. Bake 40 to 50 minutes at 350 degrees. |
