PORTUGUESE BRUSSEL SPROUTS 
1 pkg. (10 to 12 oz.) brussel sprouts
1/4 c. grated Mozzarella
1/4 c. grated cheddar cheese
5 strips bacon, crushed finely

Slice brussel sprouts into quarters. Fry bacon strips over low heat until crisp. Drain and let cool. Pour off excess grease leaving approximately 1 tablespoon in the pan. Bring pan to medium heat and fry sprouts for 5 minutes. Lower heat. Add 1/2 cup of water, cover and steam for 7 to 12 minutes. (Don't make them soft.) During last 3 minutes add cheese and bacon and let melt.

SUPERB! Followed your recipe almost* exactly and everyone LOVED it!

*Despite using a very nice heavy pan I upped the temp to about medium-high while frying the sprouts and may have increased the cooking time a minute or two until the sprouts were very lightly browned. Was also certain to use the water to deglaze the pan. I also added a touch (1/2 tsp or so) of good olive oil about a minute before steaming.
