CHEESE-DATE FOLD OVERS 
DOUGH:

1/2 cup butter
1 cup grated cheese (your choice)
1 1/3 cups all-purpose flour
1/4 tsp. salt
2 tbsp. water

Cream butter and cheese until light. Add flour and salt and blend. Add water and mix well.

Chill dough for 4 to 5 hours in refrigerator.

DATE FILLING:

1 cup chopped dates (6 oz.)
1/2 cup brown sugar
1/4 cup water

Cook in saucepan over medium heat, stirring constantly until like jam. Cool.

ASSEMBLY:

Preheat oven to 350°F.

Roll cookie dough to 1/8-inch thickness on well floured surface. Cut with 2 3/4 inch biscuit cutter. Place filling in center. Fold over and seal edges with fork dipped in flour.

Bake on ungreased cookie sheet at 375°F for 8 to 10 minutes. Cool slightly before removing from pan.

Makes about 2 1/2 dozen.
