QUAKER CHEWY OATMEAL COOKIES 
1 qt. plus 2 c. butter
2 1/2 c. sugar
1 qt. plus 3 c. brown sugar, packed
10 lg. eggs
2 tbsp. plus 2 tsp. vanilla
2 qts. plus 1 1/4 c. all-purpose flour
2 tbsp. plus 1 tsp. cinnamon
1 tbsp. plus 2 tsp. baking soda
2 1/2 tsp. salt
1 gal. plus 1 c. Quaker Oats (quick or old fashioned), uncooked
3 3/4 c. chopped walnuts
3 c. chocolate chips or raisins

Cream butter and sugars on medium speed. Add eggs and blend. Add vanilla. Combine dry ingredients and add to creamed mixture. Mix on low speed until combined. Using #30 scoop, place dough on lightly greased 18 x 26 inch sheet pan 2 inches apart. Bake at 375 degrees for 12 to 14 minutes. Yield: 11 dozen cookies.
