CHEWY OATMEAL CHOCOLATE CHIP
COOKIE
 
1/2 lb. (2 sticks) butter, softened
1 c. sugar
1 c. brown sugar
2 eggs, 1 tsp. vanilla
2 c. flour
2 1/2 c. plain uncooked oatmeal
1 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt
12 oz. chocolate chips
8 oz. Hershey bar, grated
1 1/2 c. nuts (pecans, walnuts, or almonds)

Preheat oven to 375 degrees. Cream butter, sugar and brown sugar. Mix in eggs and vanilla. Mix in flour, oatmeal, baking soda, baking powder and salt. Add remaining ingredients and mix together. Roll dough into small balls (no larger than ping pong ball size). Place about 2 inches apart on lightly greased cookie sheets. Bake for 6 minutes, 7 at the most. Yields: 5 dozen.

This is the best oatmeal cookie recipe I have ever made. I substitute the chocolate and nuts for white chocolate and dried cranberries. I also use parchment paper so the bottoms don't stick

Cookies were dry. Not sure how to make them moister, so I put in about 1/2 cup of vegetable shortening to the batter that I still needed to bake. Seemed to help a little but maybe something else could have been used.
