CAULIFLOWER SOUP 
4 tbsp. onion, chopped
1/4 c. butter
2 tbsp. all-purpose flour
4 c. milk, scalded
1 tsp. salt
Dash of pepper
1 med. head cauliflower, cooked & coarsely chopped
1 c. sharp Cheddar cheese, shredded

Saute onion in butter until tender. Blend in flour, cook 3 to 4 minutes without browning. Add scalded milk, seasonings and cauliflower. Cook until smooth and slightly thick, stirring frequently. Just before serving, add shredded cheese and stir until melted. Serves 4 to 6.
