MINI CHEESECAKES 
2 (8 oz.) pkgs. cream cheese
2 eggs
1 tsp. vanilla
1 (21 oz.) can pie filling
3/4 c. sugar
1 tbsp. lemon juice
24 vanilla wafers

Beat cream cheese, sugar, eggs, lemon juice, and vanilla until creamy. Place paper cupcake liners (don't use the large liners) in the muffin pan. Place 1 vanilla wafer in each and then fill each 2/3 full with cream cheese mixture.

Bake at 375 degrees for 15 minutes. Top with 1 tablespoon of pie filling of your choice. Chill.
