PUMPKIN BREAD 
3 eggs
3 c. sugar
2 c. pumpkin (1 can)
1 c. oil
3 c. self-rising flour
1 tsp. cinnamon
1 tsp. nutmeg
1 tsp. vanilla
1 c. pecans
Raisins to taste

Mix eggs and sugar well. Add oil. Beat well by hand. Add pumpkin and flour, beat slowly; add cinnamon, nutmeg, and vanilla; stir well. Add pecans and raisins, stir. Pour batter into 3 (1 pound) coffee cans that have been well greased. Each can will be slightly over 1/2 full and will rise to the top in cooking. Bake 1 hour at 350 degrees.
