ESCALLOPED CABBAGE CASSEROLE 
1 head cabbage, cut up
Black pepper
Velveeta cheese slices
Crushed soda crackers
1/4 c. melted butter
1/4 c. milk

Cook cabbage in salted water until tender, 5 to 6 minutes. Drain. In a baking dish layer some cabbage, sprinkle some pepper, layer cheese and then cracker crumbs. Repeat.

Finish with a layer of buttered bread crumbs (3/4 cup cracker crumbs mixed with 1/4 cup melted butter). Pour milk around edges. Bake or heat in microwave until heated through.

This vegetable dish will be eaten by those who won't normally eat vegetables.

Since microwave ovens vary in power, you may need to adjust your cooking time.
