SQUASH CASSEROLE 
1 1/2 lb. squash
2 carrots
1 onion, grated
1/2 pt. sour cream
1 can cream of chicken soup
1/2 c. butter
1 sm. jar pimentoes
1 (8 oz.) pkg. stuffing mix

Cook the squash until almost tender, drain and mash. Stir in all ingredients except butter and stuffing mix. Melt the butter and toss with the stuffing mix. Line a 9x13 inch pan with stuffing mix - reserving half. Pour squash mixture over the stuffing mix in the pan and top with remaining stuffing mix. Bake at 350 degrees for 30 minutes.
