CANDIED SWEET POTATOES 
3 lg. sweet potatoes
1/2 c. butter
1 c. sugar
1/4 c. water

Peel potatoes and cut into 2 inch slices. Drop in salted water as you peel and cut so that they won't turn dark.

Combine butter, sugar and water in electric skillet. Let butter melt and stir ingredients together; add sweet potatoes after draining well from salted water. Cover and simmer at 250 degrees for 1 hour or until done, turning frequently but gently.

If syrup is not thick enough, turn up heat and cook a few more minutes while watching closely. Syrup will thicken more as it begins to cool. These freeze well. Serves 4.

Note: This recipe never fails. Using an electric skillet seems to account for its success!
