CANDIED SWEET POTATOES WITH
PINEAPPLE
 
6 med. sized sweet potatoes
1/2 c. sugar
3/4 c. honey
1 tsp. ground cinnamon
1/2 tsp. nutmeg
1 stick butter or 2 tbsp. butter
1 can crushed pineapple

Boil the sweet potatoes whole. When cool, slice lengthwise or use ready cooked and cut sweet potatoes purchased in stores. Make a sauce using the remaining ingredients. Place 1 layer of the sliced potatoes in a baking dish. Pour half of the sauce over the potatoes. Place a second layer of the sliced potatoes over the first layer. Place remaining sauce over the potatoes. Sprinkle lightly the top with a little cinnamon and nutmeg. Bake in moderate oven 30 minutes or until sauce has gone through the potatoes. In a microwave oven, this can be done in 10 minutes on high.

For variety, you may sprinkle a few raisins in the sauce for added nutrition.

Since microwave ovens vary in power, you may need to adjust your cooking time.
