PORK TENDERLOIN WITH MUSTARD
SAUCE
 
1/4 c. soy sauce
1/4 c. bourbon
2 tbsp. brown sugar
2 1/2-3 lb. pork tenderloin

SAUCE:

1/3 c. sour cream
1/3 c. mayonnaise
1 tbsp. dry mustard
2-3 chopped green onions

Mix first 3 ingredients and marinade pork for several hours turning occasionally. Preheat oven to 325 degrees. Remove pork from marinade. Bake 1 hour, basting occasionally. Carve into thin slices on the diagonal. Serve with sauce.

This is my all-time favorite way to cook a pork tenderloin, and I've been using this recipe for over 40 years. The marinade is amazing, but then it's the sauce that makes it. and oh, is it ever good the next day! I also saute mushrooms to go with it. I'll cook the leftover marinade and use it with the mushrooms as I cook them. If you're looking for an easy to fix company meal -- this is it!
