1-2 lg. Irish potatoes Several boxes of XXX sugar (10-12) Peanut butter Boil potatoes in jackets until tender to fork. Cool. Remove and discard jackets. Mash until all lumps are gone. Begin adding XXX sugar. The mixture will first turn runny but will begin to thicken. Add sugar a little at a time until mixture becomes hard dough. (You will use a spoon to mix in the beginning but will then have to knead it like bread dough.) Roll pie crust thin on waxed paper. Spread with peanut butter. Roll up jelly roll style. Cover with waxed paper and refrigerate until hard (overnight). Remove from refrigerator, slice and wrap individually in squares of waxed paper foil. |
