GRANDMOTHER'S POTATO CANDY 
1 med. to sm. Irish potato
Pinch of salt
1-1 1/2 boxes powdered sugar
Creamy peanut butter

Boil potato with peeling on. Peel potato and mash well. Add pinch of salt. Add powdered sugar a little at a time, using as much as it takes to make a stiff dough. Pat out flat (1/4 inch thick) on waxed paper. Spread a thin layer of peanut butter on dough. Starting with 1 edge, roll into a roll. Keep wrapped with waxed paper in a cool place until firm. Slice into 1/4 inch pieces to serve. Slice off only as much as will be immediately used as it will dry out and harden.
