1 Irish potato, size of an egg 1 box confectioner's sugar 1 tsp. vanilla Peanut butter Coconut Nuts Boil potatoes until tender; peel and mash. Add sugar and vanilla. When well blended and consistency of dough, roll out on wax paper to 1/8 to 1/4 inch thick. Sprinkle with confectioner's sugar. Spread with peanut butter or coconut and nuts; or both. Roll up like jelly roll. Slice 1/4 inch slices. |
