OLD FASHIONED POTATO CANDY 
1 med. potato
1 jar peanut butter
1 box (more or less) confectioners sugar
1/4 tsp. vanilla (optional)

Bake potato (microwave is OK). Remove insides of potato, mash it with a fork while still hot. Add confectioners sugar and vanilla until mixture is consistency of pie dough.

Roll it between two pieces of waxed paper until about 1/4 inch think. Remove top sheet of waxed paper.

Spread peanut butter over entire surface of dough. Roll dough into a log and wrap it in the bottom sheet of waxed paper. Place on a hard surface in the refrigerator until firm. Peel off waxed paper. Slice.

Since microwave ovens vary in power, you may need to adjust your cooking time.
