POTATO CANDY 
1 box 10X sugar
1 sm. Irish potato
Peanut butter

Boil small potato until soft. Remove from heat and cool. When potato is cool enough to handle, peel and cut out eyes. Mash potato. Sift in enough powdered sugar to make a liquid. Continue adding sugar until a stiff dough is formed.

Place on bread board sprinkled with powdered sugar. Roll out into squares. Spread with peanut butter. Roll dough up jelly roll style. Chill (optional). Slice and serve.
