1 sm. Irish potato
2 tbsp. milk
1 - 1 1/2 boxes powdered sugar
Peanut butter
1 tsp. butter
1 tsp. vanilla

Boil potato until done; drain. Mix in butter, milk and vanilla to the consistency of mashed potatoes. Mix in powdered sugar to form a stiff dough. Roll into a rectangle and spread surface with peanut butter. Roll up, starting on long side. Chill. Cut into pieces.
