HAM CROQUETTES | |
1 c. grinded ham Little onion Green pepper, if desired WHITE SAUCE: 4 tbsp. butter 4 tbsp. flour 1 c. milk Melt butter in double boiler. Add flour. Stir with wooden spoon until smooth. Add milk gradually, stirring all the time. Mixture will be very thick. Add grinded ham mixture. Let stand in refrigerator until real cold (about 4 hours). Have a flat soup dish ready with some bread crumbs in it. Have another flat soup dish ready with one beaten egg in it. Take a spoonful of COLD ham mixture and shape into oblong roll. Roll it in the bread crumbs, then egg, then the bread crumbs. Place croquettes in oblong (greased) Pyrex dish. Bake (uncovered) in 450 degree oven for 15 minutes, no longer. Makes 6 croquettes. |
