POTATO CROQUETTES 
1 1/2 lbs. potatoes
1 egg
4 oz. Mozzarella cheese, cubed
Parsley
Bread crumbs
Salt
Garlic powder

Boil potatoes until soft. Drain and mash. Beat 1 egg with a drop of milk. Mix potatoes, egg, cubed Mozzarella cheese, salt, garlic powder and parsley until lightly moist. Shape into balls or ovals, roll in bread crumbs. Fill frying pan halfway with oil. Fry at medium temperature, turning to brown on all sides.
