POTATO AND SPINACH CROQUETTES 
2 c. hot mashed potatoes
1/2 c. minced cooked spinach
1 egg or egg replacer, slightly beaten
2 egg whites or egg replacer, slightly beaten
Fine dry bread crumbs
Salt to taste
1 1/2 tbsp. butter or less

Combine first 6 ingredients (going across) and beat until fluffy. Shape into croquettes, dip into egg and roll in crumbs. Bake on greased cookie sheet and sprinkle with a little oil and bake until browned. Serves 4.
