SOUTHERN PEANUT SOUP | |
1 c. finely chopped cooked ham 2 c. unsalted, blanched peanuts, chopped fine 2 c. finely cut green onion (1 c. onion, 1 c. green tops) 1 c. flour 1/2 c. butter 1 1/2 qt. chicken stock 1 qt. beef stock Saute ham, peanuts and white onion in butter. Add flour, blending and cooking at 4 minutes. Stir constantly to prevent sticking. Add soup stocks and blend with wire whisk. Cook 15 minutes. Stir occasionally. Just before serving, add onion and simmer 10 minutes. |
