VIRGINIA PEANUT SOUP 
1 med. onion, very finely chopped
2 tbsp. butter
2/3 c. creamy peanut butter
3 c. chicken broth
Salt and pepper to taste

Cook onion in butter until tender. Lower heat and add peanut butter. Then add chicken broth slowly, stirring until mixture is smooth. Season, lower heat, and simmer 10 minutes.

Serves 4.
