RHUBARB RAISIN PIE 
2 1/2 c. cooked rhubarb
1 1/2 c. sugar
1/2 to 3/4 c. raisins
2 level tbsp. cornstarch
2 tbsp. cold water
Pastry for 2 crust 9 inch pie

Put first 3 ingredients in pan and heat. Mix cornstarch and water together. Add to heating mixture and cook until it thickens. Remove and pour into crust. Add top crust and bake at 375 degrees until crust browns.

DIETITIAN'S NOTE:

Rhubarb is deliciously low in calories, so enjoy! Sugar could be reduced to 1 cup plus 6 packets Sweet One.
