MICROWAVE LIVER, BACON AND
ONIONS
 
Cooking the liver in bacon grease, gives an appetizing appearance without using a browning dish.

8-10 slices bacon, cut into thirds
1/4 c. all purpose flour
1 1/2 tsp. seasoned salt
1 lb. beef liver, cut into serving pieces
1 onion, thinly sliced

Place bacon in microwave casserole. Cover. Microwave at 100% (High) 2 minutes. Drain, leaving 2 tablespoons fat. Combine flour and salt. Toss liver in seasoned flour. Place liver in dish. Top with onion rings. Cover with plastic wrap. Microwave at 100% (High) 1 minute. Turn liver over. Add bacon; cover. Microwave at 50% (Medium) 4 to 5 minutes or until liver is tender, turning and rearranging pieces once. Serves 4.

Since microwave ovens vary in power, you may need to adjust your cooking time.
