LUMPIA SHANGHAI 
1 lb. pork, ground
1/2 c. chopped shrimp
1 c. chopped jicama or water chestnuts
1/2 c. chopped mushrooms
2 green onions, finely cut
2 tbsp. cornstarch dispersed in 1 tablespoon water
1 tbsp. soy sauce
1 tbsp. sesame oil
1 egg, beaten
1 tsp. salt
1 tsp. sugar
1/4 tsp. black pepper
50 wonton wrappers, 3-inches square
Cooking oil for deep frying

Combine meat, shrimp, and vegetables in a medium bowl. Stir in sugar, cornstarch-water mixture, soy sauce, sesame oil, and beaten egg. Season with salt, sugar, and pepper.

Mix ingredients well. Spoon about 1 tablespoon of the mixture on one end of each wrapper and roll tightly like a cigarette. Seal ends of wrappers with water. Deep fry and serve with Sweet and Sour Sauce.
