SCALLOPED TOMATOES 
3 lg. tomatoes, peeled & sliced
1/2 c. water or less
1/4 c. onion, chopped
1/4 c. green pepper, chopped (optional)
1 c. grated cheese
1 c. milk
2 tbsp. flour
2 tbsp. butter
1 tsp. salt
Potato chips, crushed or seasoned bread crumbs

Cook tomatoes, onions, and green pepper in water until tender. Make sauce of grated cheese, milk, flour, butter and salt. Add to tomato mixture. Place ingredients in baking dish. Cover tops with chips or crumbs and bake for 20 minutes at 325 degrees until bubbly. Serves 6.
