SCALLOPED TOMATO SUPREME 
8 slices bacon, chopped
1 lg. onion, chopped
1/2 of chopped bell pepper
6 c. cooked tomatoes
Salt and pepper
3 c. cooked rice
8 hard cooked eggs
Shredded cheese

Chop bacon and fry until crisp. Remove bacon. Cook onions and green pepper. Add tomatoes and bacon. Arrange layers of rice - sliced eggs - tomatoes and cheese in buttered 3 quart casserole. Bake 325 degrees until hot and cheese melts. 12 servings.
