KEY LIME PIE (LOW CARB) 
1 9" pre-made graham cracker pie crust
1 package of sugar-free instant pudding mix (vanilla, cream cheese, or lemon)
1 package of sugar-free lime gelatin
1 lime
1 cup cold milk (skim/or low fat)
1 cup boiling water
1 cup whipped topping

Dissolve the lime gelatin in 1 cup of boiling water, (stir and allow to sit 5 minutes until it cools a little.) Zest and juice the lime (hold the zest for a garnish). Add the lime juice to the gelatin to help with cooling and flavor. Add 1 cup of cold 2% milk to the gelatin mixture. Add 1 package of instant pudding mix.

Stir with a whisk until the ingredients are all well blended. Pour into the pre-made pie crust and refrigerate. Add whipped topping before serving (or put on top of the whole pie).

Add lime zest or slices as an optional garnish.
