DIJON PORK CHOPS 
3 tbsp. plain dried bread crumbs
1 tbsp. each Parmesan cheese, fresh parsley
1 tsp. vegetable oil
1/8 tsp. pepper
2 tsp. Dijon mustard
2 pork loin chops each 5 oz.

To shallow mixing bowl, combine crumbs, cheese, parsley, oil and pepper. Mix well and set aside. Spread both sides of each pork chop with mustard. Then press each chop into crumb mixture, coating both sides and using all the mixture. Spray rack in broiling pan with non-stick spray. Arrange chops and rack and broil 5 to 6 inches from heat source, turning once. Cook until brown for 6 minutes for each side.
