BREADED DIJON PORK CHOPS 
4 pork chops
1/3 cup all-purpose flour
1/3 cup bread crumbs (Progresso or 4C)
3 tbsp. oil

Cut fat off pork (if desired) and cut pork into bite-size pieces. Combine flour and bread crumbs - bread pork chops. Fry pieces of pork in oil.

SAUCE:

2 small onions, chopped
1 large apple, chopped
1/2 cup honey Dijon mustard
3 tbsp. honey
3 tbsp. maple syrup

Mix onion, apple, honey Dijon mustard, honey and maple syrup. Put pork into baking dish and pour mixture on top of pork.

Bake at 450°F for 25 to 30 minutes; covered.

I like to serve with sauerkraut or corn and cranberry sauce.
