PASACH SPONGE CAKE 
6 to 7 eggs
1 c. sugar
1/2 c. matza meal
4 tbsp. potato flour
Lemon rind
1/2 c. cocoa (optional)

Beat egg whites. Beat egg yolks, sugar, and lemon rinds. Add meal and flour. Fold in egg whites. Bake in ungreased tube pan for 45 minutes to 1 hour at 325 degrees. Cool before removing.
