SPONGE CAKES 
3 eggs, separated
1/4 tsp. salt
1/4 tsp. cream of tartar
8 tsp. sugar
1 tsp. lemon juice
1 tsp. grated lemon peel
1/2 c. flour, sifted

Add salt to egg whites and beat until foamy. Add cream of tartar and continue beating until stiff, but not dry. Beat egg yolks until thick. Add sugar, lemon juice and lemon peel and continue beating all the while. Quickly add carefully fold egg yolks and flour which has been sifted several times into egg whites. Drop by spoonsful into greased muffin pans or waxed paper baking cups. Bake at 350 degrees for 18 minutes.
