RHUBARB SAUCE | |
I grew up with a rampant rhubarb patch that you couldn't even give away in MN and now that I live in southern Nevada, purchase rhubarb by the stalk during a two week period in May. 6 cups sliced rhubarb 1 1/2 cups sugar 1/8 tsp. salt 1 cup water 2 tbsp. butter 1/2 tsp. vanilla Cut leaf and root end off rhubarb slices. Wash and cut into 1/2 to 1-inch pieces - it's all going to boil down anyway so size doesn't really matter! Put cut rhubarb into a kettle, add sugar, salt and water. Boil about 10 minutes - til all soft. Remove from heat. Add butter and stir til melted. Add vanilla and let cool. Note: I like it chilled and as is but it is great over ice cream or with heavy cream added. Could also be tweaked for diabetic diets by using a sweetener instead of sugar or a percentage of it with decreased sugar. Submitted by: Sharon Gima |
