MASHED YAMS WITH CARROTS AND
APPLES
 
3 large yams, peeled and cut into cubes
3 carrots, scraped and sliced thinly
1/2 c. pitted prunes
1 c. water
2 apples, peeled, cored and cubed

Put yams, carrots, prunes, and water in a saucepan. Bring to a boil, cover, and simmer for 25 minutes, or until tender.

Add apples and simmer another 25 minutes, or until mixture is hot. Remove from heat and stir with a large spoon; then serve.

Serves 8.

NOTE: If you like a sweet flavor, add honey to taste after cooking.
