APPLE - CARROT MUFFINS 
2 eggs
3/4 c. sugar
1/4 c. oil
2 c. chopped Granny Smith apples
1/2 c. shredded carrots
2 c. sifted flour
2 tsp. baking powder
1 tsp. cinnamon
1/2 tsp. salt

Combine eggs, sugar and oil in mixer bowl. Beat until well blended. Stir in apples, carrots and sifted dry ingredients. Fill greased muffin cups 2/3 full. Bake at 325 degrees for 20-25 minutes or until brown. Yield 1 1/4 dozen.

These are great! I drained my carrots and added about 1/4-1/2 c. apple cider to make up for it. Also, used whole wheat flour and it didn't make them too dense like sometimes happens. Baked for 23 minutes. WONDERFUL RECIPE.

These were surprisingly good. While mixing, I thought there was too much apple, but they were delicious. The batter was a little dry, so I added a splash of milk. These muffins came off the paper liners very well and they used ingredients I had on hand. Most of the other recipes I found used ingredients I just don't keep in my pantry. Will definitely make again.
